White tea is a slightly oxidized tea that mainly comes from China, but also grows in Nepal, Taiwan, Sri Lanka and India.
The tea has a very light color and a subtle, delicate taste. For white tea, only the youngest buds are picked from the tea bush. A light white down grows on the closed buds, from which the tea gets its name.
All teas come from the same plant species, the Camellia Sinensis. But the country of origin, the way of picking, the climate and the picking season influence the taste of the tea. The way in which the tea is processed determines the final type of tea (such as green or black). The machining process starts with painting. During this process, the tea leaves lose their moisture and wilt
White tea is the least processed of all teas. Sometimes the leaves are first steamed and then immediately dried, so not rolled. Like with the Pai Mu Tan. The Ambootia White is a white tea that is gently refreshed at a very low temperature and dried in the sun. The blade is gently rolled by hand and very slightly oxidized.
